Carbonara with Truffle, authentic Italian Style
This is a delicious truffle recipe, authentic Italian Style Carbonara with Fresh Black Truffle (winter or summer). If you make your own fresh pasta brilliant, however for most of us getting a good quality pasta from the shop ensures this meal is still very delicious. As always, the freshest best quality ingredients you can get your hands on.
Ingredients:
Spaghetti or your favorite pasta (350 grams)
Parmesan or pecorino cheese (1/4 cup, grated)
Salt (truffle salt if you have it)
Butter (50-100 grams)
Fresh black winter truffles (20-40 grams)
Parsley for garnish
2 eggs
Instructions
Cook the Pasta: Cook 350 grams of spaghetti or your favorite pasta according to the instructions on the package.
Prepare the Truffle Butter: Finely slice or grate the truffle using a grater, shaver, or microplane. Mix the truffle with the butter. Brown the butter and truffle over low heat in a pot for a few minutes until it becomes creamy. Leave some of the truffle aside for decoration.
Prepare the Egg Mixture: In a bowl, beat two eggs with a pinch of salt. Add 2 tablespoons of grated cheese (either pecorino or Parmesan). You can be more generous with the cheese if you wish.
Combine Ingredients: Once the pasta is cooked, drain it and quickly add the egg and cheese mixture, along with the truffle and butter mixture. Mix everything thoroughly.
Plate and Garnish: Plate the pasta and garnish with the remaining truffle shavings and a sprinkle of parsley.
